Chili Lime Chicken Burgers

The last day of Grill Week has arrived. 😦  For the 7th and final recipe, I decided to do another burger, this time with chicken.  I usually stick with beef burgers, so this was a little outside of the norm for me.  I was pleased with this tasty and guilt-free meal!  It’s a flavorful burger topped with guacamole (my favorite).  I served it with a side of Quiona Salad to complete my summertime meal.

Ingredients

Burgers

1lb ground chicken
2 green onions, chopped
1/4 cup chopped red bell pepper
2 Tablespoons chopped cilantro
2 teaspoons minced garlic
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
1 lime, cut in half
4 slices pepper jack cheese
4 buns, toasted

Guacamole

1 avocado
Garlic powder
Salt & pepper

Directions

To mix the burgers, combine the chicken, green onions, bell pepper, cilantro, garlic, salt, red pepper flakes, and juice from half of a lime in a large bowl until completely combined. Form into 4 patties and spray burgers with non-stick spray.

Heat grill to medium-high and grill the burgers for 3-4 minutes on each side, until cooked through. Top each burger with cheese, then tent with foil to allow the cheese to melt completely & allowing to rest for 5 minutes.

While the burgers are resting, make the guacamole. Mash all of the guac ingredients together and mash. Place burgers on toasted buns & top with guacamole. Enjoy!

Add the ground chicken, green onions, red bell pepper, cilantro, garlic, salt, red pepper flakes, and lime juice.

Mix the meat and form 4 patties. Place on foil and spray each side of the patties with cooking spray.

Place on the hot grill. I used foil because the burgers are so lean, I didn’t want them to fall through the grates.

While the burgers are cooking, place your avocado, garlic powder, and s&p in a bowl.

Do the mash!

Cook the burgers for about 4 minutes. When they are about done, add your cheese. I used Colby Jack because we had a bunch of it.

Place on your toasted bun and slather on the guac.
