Gingerbread Cookie Bars

Mmm gingerbread.  If you are a fan of gingerbread cookies like I am, you will love, love, love these bars.  Added bonus, you don’t have to roll out dough and cut out cookies, you just have to press the dough into a pan and bake it.  Easy peasy.  Oh, then you slather the bars with cream cheese frosting and stuff them in your face. 🙂

Makes: Around 24 bars

Ingredients

½ cup butter, melted
¾ cup granulated sugar
¼ cup brown sugar
½ teaspoon vanilla extract
⅓ cup molasses
1 egg
2 teaspoons baking soda
2 cups all-purpose flour
1 Tablespoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
½ teaspoon salt

Cream Cheese Frosting

½ cup butter, softened
1 (8 ounce) package cream cheese, softened
1 lb (3¾ cups) powdered sugar
1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees and spray a 9×13-inch baking dish with nonstick cooking spray; set aside.

Add the butter, sugar, brown sugar, vanilla, and molasses in a large mixing bowl.  With mixer on medium-speed, beat together until smooth and creamy. Add in the egg and mix until combined.  Mix in the flour, baking soda, all of the spices, and the salt.  Mix until combined.

Pour dough into prepared pan, spread evenly with hands or a spatula.  Bake in preheated oven for 15-20 minutes.  Make sure the dough is cooked all the way through (use a toothpick to poke the center to check), but do not overbake.  Remove from the oven and cool.

Cream Cheese Frosting

When the bars have cooled, prepare the frosting.  With a mixer, cream together the butter and cream cheese for about a minute, until smooth.  Add in the powdered sugar & vanilla with the mixer on low-speed.  Bring the speed up to high and beat until fluffy.  Spread frosting over completely cooled bars, slice, and enjoy!  Store bars in refrigerator.
