Hello and happy Friday! I’m skipping Friday Favorites this week and bringing you a cookie recipe instead. I hope you don’t mind. I’ve been baking up a storm in preparation for our trip back home and have quite a few recipes I want to share with you before Christmas, let’s see how many I can squeeze in!
This is a fantastic recipe for Snowball Cookies, they are sweet, buttery, and filled with wonderful pecan pieces. A great cookie, indeed!
From: Land O’Lakes
Makes: 36 cookies
2 cups all-purpose flour
2 cups finely chopped pecans
1/4 cup sugar
1 teaspoon vanilla
Preheat oven to 325°F and set aside 2 ungreased cookie sheets.In a mixer, beat together the flour, pecans, sugar, butter, and vanilla. Make sure to scrape the sides of the bowl and beat until well mixed.Scoop out 1-inch balls onto your cookie sheets and bake for 18-25 minutes. The cookies should be lightly golden. Remove from the oven and let cool for 5 minutes. Now roll each cookie in powdered sugar and then allow the cookies to cool completely, then roll in the powdered sugar one more time. Enjoy!
Combine all ingredients in the bowl of a mixer.
Beat until combined.
Scoop onto your cookie sheets.
Bake for about 18 minutes (up to 25) until cookies are turning lightly golden brown.
After cooling for 5 minutes, roll each cookie in powdered sugar.
Allow the cookies to cool completely and then roll in powdered sugar again. Enjoy!
