No-Bake Triple Peanut Butter and Chocolate Chewy Cereal Bars
From: Averie Cooks
Prep Time: 15 minutes
Total Time: 2+ hours, for chilling
1 heaping cup creamy peanut butter (don’t use natural or homemade, it’s too runny to glue the cereal together)
1/2 cup light corn syrup (light-colored, not lite)
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 tablespoon vanilla extract
3 1/2 cups corn flakes cereal
Chocolate-Peanut Butter Swirled Topping
1/2 heaping cup semi-sweet chocolate chips, melted
1/4 heaping cup creamy peanut butter, melted with the chocolate
1/4 cup creamy peanut butter, for swirling on top
Prepare your baking dish by lining a square 8-inch pan with aluminum foil and spraying with cooking spray. Set aside.
Combine 1 heaping cup of peanut butter, corn syrup, granulated sugar, and brown sugar in a large, microwave-safe bowl. Microwave on high for 1 minute. Stir the mixture (it will be grainy) and heat on high for 1 more minute. Stir in the vanilla and then stir in the cereal. Pour the mixture into your prepared pan. Pack the bars down evenly with a spatula.
Using the same large, microwave-safe bowl (as long as you’ve scraped it out well) combine the chocolate chips and 1/4 heaping cup of peanut butter. Heat on high for 1 minute. Stir the mixture together, if the mixture isn’t smooth and the chips aren’t completely melted, keep microwaving in 10-second intervals, stirring in between until smooth. Pour the mixture over the bars. Smooth the topping out with a spatula.
In small, microwave-safe bowl heat the remaining 1/4 cup of peanut butter for about 30 seconds or until melted. Stir. Drizzle the peanut butter over the chocolate and swirl it with the tip of a knife or toothpick. Another method (the one I used) is pouring the peanut butter out in evenly spaced lines, rotate the pan 90 degrees, and drag a toothpick in lines over the peanut butter to create a marbled look.
Cover the bars with aluminum foil and place the pan in the refrigerator to allow the topping to set. This will take at least 2-3 hours, to be safe I let mine set overnight. Once set, remove the foil, cut, serve, and enjoy! Store the bars in an airtight container at room temperature for up to 1 week, in the fridge for up to 2 weeks, or in the freezer for up to 6 months.
