This recipe comes a little late, I meant to post it before Valentine’s Day, but no such luck. It’s a tasty recipe that I had the pleasure of eating over Christmas when I spent a day with two of my dearest friends. Emphasis on the eating, as Cindy did all of the work. Sarah and I did a great job cheering her on and making sure the finished product tasted good. 🙂 I changed up the recipe a little to make it right for Valentines Day by switching from semi-sweet chocolate to white chocolate and using special Valentine’s Day M&Ms. That’s one of the great things about this bark, it can easily be adjusted to fit whatever holiday is around the corner. Another great thing, its delicious. I stored mine in the freezer, which kept it out of sight and easier to not eat all of it at once. Go ahead, make some!

One sleeve of Saltine crackers (you can use an off-brand)
1 cup brown sugar
1 cup butter
2 1/2 cups semi-sweet chips (white, milk, or dark)
1/3 cup peanut butter
Chopped M&M’s (or other candies or nuts)
Preheat oven to 400 degrees. Line a jelly roll pan (cookie sheet with sides) with foil or parchment paper. Lay the saltines on the pan with a small amount of space in between each cracker.
Bring the brown sugar and butter to a boil in a saucepan over medium heat. Once boiling, turn the heat down to medium low and boil for 3 minutes, without stirring.
Pour the boiling mix over the crackers. Bake for 5 minutes.
Take the pan out of the oven and spoon the peanut butter over the top. Bake for a minute. Take the pan out of the oven again and spread the now melted peanut butter over the crackers. Sprinkle on your chocolate chips and bake for another minute.
Spread the chocolate chips evenly over the crackers with a spoon or spatula. Top with M&Ms and freeze until hardened, for 1 to 2 hours.
After the bark has set, break it into pieces and store in a ziplock bag in the freezer for up to four weeks. Enjoy!
