Cookie Cutter Fudge

Looking for a last-minute gift idea or fun baking activity to do with the family on Christmas?  I’ve got an easy one for you.  Cookie cutter fudge.  Do it. 🙂

I hope you all are having a fantastic holiday!  Sorry I’ve been absent from my blog, but I’ve been having too much fun with family and friends back in SD & IA to have time to open my laptop.  We just had our Christmas with Josh’s family today and it was wonderful!  We’ll be heading back to Iowa tomorrow to see my Grandma and then celebrating with my family on Christmas day.  I might try to sneak in another recipe before Christmas, so stay tuned.  Next week, Friday Favorites will be back and I’ll make sure to bring you more recipes as we head into the New Year.  In the meantime, have a blessed and safe Christmas!

Makes 6 large cookie cutters

Ingredients

1 1/2 cups semisweet chocolate chips
1 cup peanut butter chips
1 can (14 ounces) sweetened condensed milk
2 tablespoons butter or margarine, softened
1 teaspoon vanilla
Candies & icing to decorate, if desired

Directions

Place six cookie cutters (if using around 3-inch sized cookie cutters) on 5-inch squares of foil.  Wrap the foil around and up the sides of the cookie cutters, make sure there is a nice seal.  Place the cookie cutters on a cookie sheet and spray lightly with non-stick cooking spray.
In a large microwaveable bowl, mix together the chocolate chips, peanut butter chips, sweetened condensed milk, and butter.  Microwave uncovered for 1-2 minutes, stirring every 30 seconds.  When the chips are almost melted, remove from the microwave and stir in the vanilla.  Stir until the chips are all melted.
Spoon the fudge into the cookie cutters.  Place them in the refrigerator uncovered for about 2 hours to allow the fudge to firm up.  Decorate with icing or candy if you wish.
Carefully remove the foil. If giving away as a gift, wrap in cellophane gift bags and give away.  Push the fudge out of the cookie cutters and enjoy!
